Garlic Butter Chicken Bites

Ingredients:

  • 500g boneless chicken breasts, cut into bite-sized pieces
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prep the Chicken:

    • Season the chicken pieces with salt, pepper, paprika, and Italian seasoning. Make sure each piece is well-coated.
  2. Cook the Chicken:

    • In a large skillet, heat olive oil over medium-high heat.
    • Add the chicken pieces in a single layer and cook for 3-4 minutes on each side until golden brown and cooked through. Make sure not to overcrowd the pan; cook in batches if necessary.
    • Remove the chicken from the skillet and set aside.
  3. Make the Garlic Butter Sauce:

    • In the same skillet, reduce the heat to medium, add butter and let it melt.
    • Add minced garlic and cook for 1-2 minutes until fragrant (be careful not to burn the garlic).
    • If you like a tangy flavor, you can add lemon juice at this point.
  4. Combine and Serve:

    • Return the cooked chicken to the skillet and toss to coat with the garlic butter sauce.
    • Let it cook for another 1-2 minutes until the chicken is heated through.
    • Garnish with fresh chopped parsley and serve hot.
